What is gluten? |

It's a protein found in wheat, barley, rye and other grains and in many foods you
wouldn't think about. Foods that may contain gluten are pastas, pizza, pastries, salad
dressings, sausages, hot dogs, lunch meat, licorice, and sauces just to name a few. There are even
non-food products to watch for such as lipstick and toothpaste!

How do you recognize gluten intolerance or
sensitivity? |

That's a tough one! Different people have very different symptoms which is why
it is so difficult to diagnose. Gluten intolerance symptoms include but are not limited to
excessive fatigue, depression, weight gain, and body/joint aches. |

What is Celiac Disease and its
symptoms? |
|
Celiac disease is a digestive
condition identified by an autoimmune reaction to the ingestion of gluten. Celiac
disease is diagnosed through a blood test and/or an intestinal biopsy. Inconclusive or negative
results in these tests may point to gluten intolerance. People with celiac disease who eat foods
containing gluten experience an autoimmune reaction in their small intestine, causing damage to the
inner surface of the intestinal wall and an inability to absorb nutrients extending its effects to
other parts of the body. Symptoms of celiac disease often include intermittent diarrhea,
abdominal pain, and bloating. Less obvious symptoms can include irritability or depression,
anemia, stomach upset, joint pain, muscle cramps, skin rash, mouth sores, dental and bone disorders
(such as osteoporosis), and tingling in the legs and feet (neuropathy). People with
gluten intolerance suffer very similar symptoms but the blood test and/or an intestinal biopsy for
celiac disease returns negative.

Regulation of the label "gluten free" varies widely by country. In 2007, the United
States FDA issued regulations limiting the use of the term "gluten-free" in food products to
those with less than 20 ppm of gluten. But gluten is found to be a part of many common
